Asian Grilled Steelhead Trout
Serves: 4
Ingredients:
4 Lime Pepper Steelhead Fillets
1 TB ginger root
1 tsp grated lime peel
1/4 c. safflower oil
1/2 tsp crushed red pepper
2 1/2 tsp lime juice
salt to taste
Preparations:
In a medium bowl, combine lime juice and lime peel. In small pan sauté ginger in oil just lightly browned and aromatic. Remove pan from heat; stir in red pepper. When oil cools completely, whisk gradually into lime juice and peel.
Set aside. Heat grill and brush with oil. Grill steelhead skin side down 5 minutes. Gently turn. Grill for 2 more minutes, or until steelhead turns opaque and is fork tender.
