Baked Steelhead with Vegtables
Ingredients:
4-6 Steelhead Trout Fillets
1 cup diced celery
1 cup diced onions
1 Red bell pepper diced
1 Green pepper diced
1 cans Italian Stewed Tomatoes
Butter
Salt and pepper
Preparations:
Pre-heat oven to 350° F
Sauté celery, onions, bell pepper and green pepper in a pan with melted butter until tender; add can of Italian Stewed Tomatoes-cook until heated well.
Oil a glass baking dish with cooking spray and place fish fillets skin side down. Pour the vegetable mixture over the fish, salt and pepper to taste.
Bake for 18-20 minutes. Can be served with steamed rice.
