Baked Steelhead with Vegtables

Ingredients:

  • 4-6 Steelhead Trout Fillets
  • 1 cup diced celery
  • 1 cup diced onions
  • 1 Red bell pepper diced
  • 1 Green pepper diced
  • 1 cans Italian Stewed Tomatoes
  • Butter
  • Salt and pepper

Preparations:

  • Pre-heat oven to 350° F
  • Sauté celery, onions, bell pepper and green pepper in a pan with melted butter until tender; add can of Italian Stewed Tomatoes-cook until heated well.
  • Oil a glass baking dish with cooking spray and place fish fillets skin side down. Pour the vegetable mixture over the fish, salt and pepper to taste.
  • Bake for 18-20 minutes. Can be served with steamed rice.
